mini upside down pineapple cakes


a friend brought these ah-maz-ing
mini upside down pineapple cakes 
to a party, and I had to try them~

they are so easy and delish~
all you'll need is:

one yellow cake mix 
(and the necessary items to make the mix: eggs, oil, etc...)
a can of sliced pineapple rings
brown sugar to spoon into each cupcake
about 1/2 cup melted butter 
cupcake pans or mini bunt pans

spray your pans generously with non-stick cooking spray
and place a pineapple ring in each bunt or cupcake space (no liner needed)

I only had one bunt pan so I had to cut down the pineapple rings for the 
cupcake pan, don't worry they come out the same for either...

spoon a heap of brown sugar (at least two tablespoons, more if you like)
over each pineapple ring, then drizzle about 2 teaspoons of 
the melted butter over each (not shown)...

mix the yellow cake according to package directions and drop about 1/3 cup
over each section...then bake about 17-22 minutes 


allow to cool completely then carefully slice around edges with a butter knife
to make sure no edges are sticking, then turn your pan upside down 
and whallla, how cute are these? 
Either type of pan produces a yummy mini upside down pineapple cake....
