These Ricotta Pancakes are delish!!!
I tweeked Giada's recipe a bit...
1 2/3 cups water
1-1/2 teaspoons vanilla
2 cups pancake/waffle mix (recommended:Krusteaz)
1 cup whole milk ricotta cheese
Combine the water and vanilla in a large bowl, add the
pancake mix and stir just until moistened but still lumpy.
Stir in the ricotta but allow it to stay a little lumpy...
heat griddle to medium or 350...spoon 1/4 cup of batter
for each pancake...cook until golden brown (about 3 min per side)
Giada's calls for a honey syrup and blueberries folded into the batter
but we used pure maple syrup and sliced up bananas on top!
we might have a slight pancake obsession at our house?

Pancakes are so comforting aren't they? I always think they make a morning special. I just made a pancake recipe this week with apples and cinnamon on top. Yum!
